  1. Remember that eggs require refrigeration, especially if they will be used in raw applications such as in ice-creams or mousse. Think before you buy a case of eggs at a bargain price. Do you have a fridge that can handle 30 dozen until you use them up for cooking? Even if you are cooking and baking a lot, it takes time to go through so many eggs. Do a cost benefit analysis before you succumb to the bargain...
